Spicy Cornbread Pudding

This isn't very business oriented but food does keep us going and I had to share a perfect party recipe... easy, cheap, quick and yummy! I made this dish this past weekend for a Mardi Gras party we attended. I was looking through some cajun recipes and found one I liked, made a few adjustments and Voila! ... Cornbread Pudding with a Kick. It wasn't too mushy, held together well and was a hit when paired with a bowl or red beans.

Ingredients:
1 can - Rotel (original), drained
1 can - unsalted corn, drained
1 can - cream corn
1 box - Jiffy Cornbread mix
4 oz - sharp cheddar cheese
3 eggs
3 Tablespoons butter
1 Tablespoon minced garlic
Chopped parsley to sprinkle on top for presentation

Directions:
Mix it all together real well. Pour in 9 x 9 glass baking dish. Sprinkle with Parsley. Bake at 350° for 1 hour or until center is done. Enjoy!
